OUR PROJECTS
We are committed to our environment and the quality of the products we offer in our restaurant, which is why we have set to work to shape the projects we are passionate about.
We started creating our own beer in 2018, and in 2021, our first red wine made with the Monastrell variety, the result of carefully cultivating our family's organic vineyards.
In 2023, we harvested and launched another vintage of this wine, which will allow us to appreciate the best of the land and will soon be available in the restaurant.


THE WINE:
Convite House
This house was our meeting place; any excuse was welcome to gather family and friends there to have a good time celebrating life. Infused with that festive spirit, this wine is born from the vineyards surrounding Casa Convite.
MONASTERY
Years 2021 and 2023
Toñi is in charge of tending the family's organic Monastrell vineyards. They are located just 7 kilometers from our restaurant in a cool area, at 760 meters above sea level, with abundant rainfall and temperature variations. It is a fresh, fruity, and balsamic wine that conveys the character of the vineyard: surrounded by thyme, rosemary, and scrubland. Its brief aging in 500-liter barrels has also given it light roasted nuances.
CRAFT BEER
THE BLACKSMITH
Beer is one of her greatest passions. Juana started working at a brewery specializing in international beers at 19. Now, as a sommelier, she felt the need to bring that passion to her restaurant, and in February 2018, her first craft beer, La Herrera, was born.
“La Herrera is the beer I would always drink when someone asks me what I would like to drink.”
And having a Herrera in the family who is an integral part of our Workshop, all we needed were alchemists like the Trinitaria Beers team, capable of uniting all the flavors we had in mind.

The Herrera Rubia It is ideal for welcoming our customers: refreshing, aromatic and perfect for opening the mouth with our organically grown patatas bravas.
Our beer
Herrera Tostada (Munich type), reminds us of those malty and dry German beers, perfect for more creative pairings.
The Workshop Vermouth
For Juana, having lthe possibility
Creating your own vermouth has been a dream come true.
Selecting the herbs with which it is macerated to give it the Taller's personal and exclusive touch is possible thanks to teamwork, which together with the winemakers of Bodegas Viña Elena (Elena Pacheco and Pilar Abellán), results in this unique vermouth, with a marked mountain character that transmits its careful selection of native aromatics.
